Three finalists have their best work out on the trestle table: a swan in white icing, a chocolate cake tall enough to want scaffolding, and a tower of pink and yellow battenberg. All three are smiling at the judge.

She is smiling back, and it is her afternoon you have to build — the view from her side of the table, and everything in front of it.
